Molen De Valk
Molen De Valk is a working windmill from 1753 on the old town wall of Montfoort, run by about 40 volunteers together with Het Utrechts Landschap, which grinds and sells its own flour and meal.
The grain is harvested in the Utrechtse Waarden and ground and sifted in the mill itself, which gives wholemeal (meel) and sifted white flour (bloem) of wheat, spelt and rye, as well as buckwheat, barley and maize flour. The mill also blends its own mixes for bread, cake, biscuits and pancakes. The shop sells regional products alongside, such as juice, jam, syrup, honey and mustard.
The mill shop opens on Saturdays from 10:00 to 16:00, when flags fly on the yard, and the millers on duty will show you round on request. Larger quantities can be ordered by email and delivery arranged, and part of the range is stocked by a few other shops in and around Montfoort, though only the mill carries all of it.
The mill's flour also goes to bakers, who use it in their own bread and baking.
