Flour, grains & pantry from Dutch mills and farms

now: amsterdam · rotterdam · the hague · utrecht · ede · soon: the rest of the netherlands

This page is The Field Guide's list of mills and farms in the Netherlands selling their own flour, grain, oil, nuts and seeds, each one checked by us and grouped by province. This page lists working mills that sell their own stone-ground flour, farms that sell their own grain, and oils, nuts and seeds pressed or grown by the producer or bought from named local farms. Mills without a shop and resold products with no named source aren't included. Where a mill or farm calls its grain organic, we look the claim up in the register.

Buying from the mill or the farm means you know whose field the grain came from, and you can ask what was sprayed on it.

Questions about pantry

What is stone-ground flour?

Stone-ground flour (steengemalen meel) is grain ground between two millstones, the traditional way, instead of between the steel rollers of an industrial mill. The whole kernel goes through the stones together, so wholemeal stone-ground flour keeps the bran and the germ. In the Field Guide, a mill is included when it is a working mill that sells its own stone-ground flour. Mills and farms on the map.

Can I buy flour from a Dutch windmill?

Yes. Some Dutch windmills and watermills still grind grain for flour, and many of those sell it from a small mill shop (molenwinkel), usually open on set days. Mills without a shop aren't included in the Field Guide, because you can't buy from them. Each listing gives the opening hours where the mill publishes them. Flour, grains and pantry.

What does volkoren mean?

Volkoren means wholemeal or wholegrain: the whole kernel is milled, with the bran, the germ and the white endosperm. Volkorenmeel is wholemeal flour, and under Dutch food law bread may only be sold as volkorenbrood when it is made entirely with wholemeal flour. Tarwebloem (white wheat flour) is flour with the bran and germ sifted out. Flour, grains and pantry.

What is the difference between meel and bloem?

In Dutch, meel is flour that still contains some or all of the bran, from volkorenmeel (wholemeal flour) to partly sifted flours, and bloem is white flour with the bran and germ sifted out. Tarwebloem is white wheat flour, speltbloem white spelt flour and roggemeel rye flour. A mill shop usually sells several grades of the same grain, and the bag names the grain and the grade.

How long does stone-ground wholemeal flour keep?

Wholemeal flour contains the germ of the grain, which holds oil, so it keeps for a shorter time than white flour, where the germ has been sifted out. Mills that grind to order often print a milling date or a best-before date on the bag. Store it airtight in a cool, dark place, or in the freezer if you buy a large sack from the mill.

Where can I buy grain directly from a Dutch farm?

Some arable farms sell their own wheat, spelt, rye, oats or buckwheat as whole grain or flour from the farm shop, and some have it milled at a local mill. In the Field Guide, a farm is included for grain when it sells grain it grew itself. Use the organic methods filter to see the farms and mills that are certified organic or state that they use no synthetic pesticides or fertiliser.

What does koudgeperst mean on oil?

Koudgeperst means cold-pressed: the seeds or fruit are pressed mechanically without added heat, and the oil is not refined afterwards. For olive oil, EU rules set the limit at 27°C; for other oils, such as rapeseed (koolzaadolie) or linseed oil (lijnzaadolie), the term has no legal definition. Oils are included in the Field Guide when the producer presses them itself or names the local farms the seeds come from.

Which nuts, seeds and oils are included in the Field Guide?

Oils, nuts and seeds are included when the producer grows or presses them itself, or names the local farms they come from. Resold products with no named source aren't included, so a shop selling imported nuts in bulk isn't listed for them. The listing names what each producer sells, for example walnuts, hazelnuts or cold-pressed rapeseed oil. Criteria per product.

Is stone-ground flour organic?

Not necessarily. Stone-ground describes how the grain is milled, and organic (biologisch) describes how it was grown, so a mill can grind conventional grain on millstones. Biologisch is a protected term in the EU, and we check every organic claim in the EU organic register (SKAL) and Demeter's register. Use the certified organic filter for mills and farms with a certificate.

What do SKAL and Demeter mean on a bag of flour?

SKAL is the Dutch inspection body for organic farming, and a flour sold as biologisch must come from grain grown and milled under an EU organic certificate checked by SKAL. Demeter is the international biodynamic standard, which asks more than organic, for example that the whole farm is converted. We look up each claim in the registers, and the register decides when it disagrees with a website. How we check organic status.

What does the Field Guide check for flour, grain and pantry?

For flour, we check that the mill is working, grinds on stone and sells its own flour from a shop. For grain, oils, nuts and seeds, we check that the producer grew or pressed them, or names the local farms they come from. Organic claims are checked in the registers, and each listing shows the month we checked it. Full criteria per product.
