Molen de Roos
- Organic methods: no synthetic pesticides or fertiliser, not certified
Molen de Roos is a working windmill on the Phoenixstraat in Delft that grinds grain into flour by wind power every week and sells it in the mill shop, together with sourdough bread from its own bakery.
The mill grinds wheat, spelt and rye on millstones, and the oat flakes in the shop come from the same mill. Their website says the grain is organic (biologisch), and it is ground on stone by wind power. The bakery Bij de Roos, in the old miller's house, bakes sourdough bread (desembrood), buns and biscuits all year round; their website does not say whether baker's yeast is added to the sourdough. The shop also stocks what you need for baking at home.
The mill shop is open Wednesday to Saturday from 9:00 to 17:00, and flour and baking mixes can also be ordered through their webshop. The mill itself can be visited for free on Wednesday and Friday afternoons and on Saturday, and from May to September the miller's café serves coffee and sourdough sandwiches.
In the mill garden beside the windmill, small plots of grain show the crops that are ground in the mill, and the herbs grown there are used in the bakery.
