De Witte Molen
- No synthetic pesticides or fertiliser (certified)
De Witte Molen is a mill on the Looimolenweg in Nijmegen that grinds organic grain on millstones and sells its flours, flakes and seeds in the mill shop.
All the grain is ground on millstones into wholemeal flour, and part of it is then sifted into gebuild meel (a lighter flour keeping about 80% of the grain) or white flour (about 65%). The range covers several wheat flours, wheat-rye and multigrain mixes, a low-gluten flour, and barley, oat, buckwheat, maize, rice and kamut flour, as well as flakes, mueslis, seeds and animal feed. The mill is certified organic (SKAL); we found its certificate in the register. For some years the mill has added a small amount, 1% of each batch, of what their website calls an ecological bread improver and ecological gluten, to meet bakers' wishes, so ask for flour without additives if you want it plain. Where the grain is grown, we couldn't confirm.
The mill shop is open Monday from 10:00 to 14:00, Tuesday to Friday from 10:00 to 17:00 and Saturday from 10:00 to 16:00, and during those hours you can walk into the mill and watch the grain being ground. The Looimolenweg is one-way, so by car the mill can only be reached from the Floraweg. Groups of up to 15 can book a 45-minute tour.
