Molenwinkel De Walvisch
- Organic methods: no synthetic pesticides or fertiliser, not certified
Molenwinkel De Walvisch is the shop of the Schiedam mills foundation on the ground floor of the De Walvisch windmill, on the Westvest in Schiedam, where home bakers can buy flour stone-ground at the foundation's working mill, De Vrijheid.
The miller at De Vrijheid grinds on two pairs of blue stones and one pair of composite stones, and the meal is sold with nothing added. The shop stocks wholemeal wheat, wheat flour, spelt meal and flour, wholemeal rye and rye flour, T65, Zeeland flour (Zeeuws bloem), maize meal, semolina and a durum flour for pasta; whether every bag comes from De Vrijheid is not stated, and where the grain is grown is not given. The mill works with conventional grain and, according to their website, also with SKAL-certified organic grain under SKAL number 028368. Yeast, bread and cake mixes, honey, seeds and baking tins are also sold, and those we have not judged.
The shop is open Tuesday to Sunday from 11:00 to 17:00 and serves coffee. Until the end of January 2027 the Westvest can only be reached via the Gerrit Verboonstraat because of work on the Welfbrug.
Whenever there is enough wind De Vrijheid grinds by wind power, and it falls back on an electric motor only when there is not.
