- Pigs and poultry live free range: outdoors on pasture, in woodland or a run
- Closed-loop farming
Kaas en zuivelboerderij van Winden is a dairy farm with a shop on the Gaagweg in Schipluiden, where the milk of 65 cows is sold raw or as whole milk and made into boerenkaas (raw-milk farm cheese), butter, yoghurt, quark and kefir, and the farm's own cows also supply the beef.
The cows graze outside in summer and are loose-housed in winter, and milk from the grazing months goes into a seasonal grass cheese (graskaas). According to their website the cows eat locally grown grass and maize that meets VLOG (GMO-free) criteria and get homeopathic treatment first, antibiotics only when unavoidable. Their website says plainly that the farm is not organic; what qualifies it here is the grazing herd and the raw milk. Beef from their own cows is sold year-round, one animal at a time, so not every cut is always in: from steaks and mince to oxtail, marrow bone, liver, heart, tongue and cheek. The shop also carries goat cheese and organic cheeses of unstated origin, and barn eggs (scharreleieren), which don't meet our bar.
The shop is open Tuesday and Friday from 12:30 to 17:30 and Saturday from 9:00 to 16:00. Milk, buttermilk, kefir and yoghurt are sold without containers, so bring your own bottles or buckets.
The farm works a loop: the cows' manure goes on the grassland, the grass feeds the cows, and seaweed lime is spread on the land.
