Vishuysch Haarlem is a fish shop and takeaway on the Rivièradreef in Schalkwijk, Haarlem, whose oysters are the one part of the counter we could trace: Fine de Claire oysters from France, matured for at least four weeks in shallow basins flushed with seawater, the claires that give them their name, along with Zeeland oysters and Gillardeau oysters, all sold by the dozen.

The rest of the range, fresh salmon, tuna and cod fillet, smoked eel and mackerel, Dutch shrimp, mussels, gambas and calamari, and the fried fish and filled rolls of a Dutch fish stall, carries no origin or catch method on their website, so none of it has passed our fish check. Their website is an ordering menu, and it does not say which Zeeland grower supplies the oysters.

Everything is sold from the shop at Rivièradreef 5, with delivery in the Haarlem area through Thuisbezorgd.
