Vis van Henry (Jacob Obrechtstraat)
Vis van Henry is a fishmonger with stalls on three Amsterdam markets, and this is its Saturday stall at the Zuidermrkt on the Jacob Obrechtstraat, where the oysters passed our check.
Those oysters are farmed Zeeland creuse (Pacific oyster) and Zeeland flat oyster, alongside Fines de Claire, Umami and Irish oysters. The rest of the range, North Sea fish, smoked fish and other seafood, isn't confirmed species by species. Their website says they sell no endangered species such as eel or certain kinds of tuna, no fish treated with antibiotics and nothing from large anonymous fish farms. They buy from day boats and line fishermen, or fish with an MSC or ASC label, and have it smoked at small smokehouses where they know the smokers by name.
The stall stands at the Zuidermrkt every Saturday from 9:30 to 17:00, and you can order ahead from their order list and collect at the stall. On Wednesdays the business is at the farmers' market on the Haarlemmerplein and on Fridays on the Minervaplein, both from 8:30 to 17:00.
They work only with fish in season, fresh from the auction four times a week, such as line-caught wild sea bass from the North Sea, which is available for only a few months a year.
