Bakkerij De Veldkeuken
- No synthetic pesticides or fertiliser (certified)
De Veldkeuken is a certified organic sourdough bakery and mill in the stables of an old farm on the Rhijnauwen estate near Bunnik, and it bakes for the Veldkeuken restaurant and estate shop at Oud Amelisweerd.
The loaves are sourdough, shaped by hand and given time to rise, and the range runs from wholemeal seed bread, rye and pain gris to spelt and emmer levain and a loaf from Utrechtse Blauwe wheat. All the grain is grown organically or biodynamically, much of it by growers the bakers know personally, such as Landgoud, Het Utrechts Landschap and the Velhorst estate, and most of it is milled in the bakery itself. The bakery is certified organic (SKAL); we found it in the register.
The bakery itself isn't a shop. Instead the bread is sold in the estate shop (landgoedwinkel) next to the restaurant, open Tuesday to Sunday from 9:30 to 17:00, with most kinds baked on Wednesday, Friday and Saturday. Webshop orders can be collected at the bakery from Tuesday to Saturday between 10:00 and 14:00, and the bread is also stocked by organic shops in Utrecht, Bilthoven, Driebergen and Zeist.
Two mills in the bakery grind rye, spelt, emmer and Utrechtse Blauwe, and small lots of unusual local grain go through their own Tiroler mill.
