Bakkerscafé
- Organic methods: no synthetic pesticides or fertiliser, not certified
Bakkerscafé is a bakery in Nijmegen, run as a social enterprise since 2009, that bakes bread and cakes for its two shops with lunchrooms, one of them Brood op de plank on the Castellastraat.
The everyday range is multigrain, white sourdough (desem wit), wheat, spelt, maize and a sunflower and linseed loaf, and each week the shops add specials from grains such as oats and millet, extra sourdough breads, filled loaves and spiced breakfast cake (ontbijtkoek). The dough is kneaded several times and left to rest and rise for a long time before it is baked. Whether the loaves other than the sourdough rise with yeast, their website doesn't say. Their website states that the bakery is SKAL-certified. The shops also sell apple pie, chocolate cake, cheesecake and biscuits.
Brood op de plank at Castellastraat 29 is open Monday to Saturday from 8:30 to 17:00 and Sunday from 9:30 to 15:30. The bakery itself, Dé Bakkerij at Hatertseweg 23C, has a second shop and lunchroom, open weekdays from 8:30 to 16:00 and Saturday until 15:30. Their own couriers deliver bread around Nijmegen seven days a week, by bike or wheelchair.
The flour, which their website calls organic, is ground on millstones at De Witte Molen, a windmill in Nijmegen, and the mill in turn is on their list of businesses that buy the bread.
