de Bakkerszonen
De Bakkerszonen is a bakery with a shop at Waldenlaan 2 in Oostpoort, Amsterdam, one of several branches, which bakes all of its bread on its own einkorn mother sourdough.
Their website says every loaf is made with the bakery's own mother sourdough (moederdesem), and that the einkorn (eenkoorn) behind it is grown around Amsterdam and milled in the bakery's own mill. Whether baker's yeast is added to any loaf alongside the sourdough, and whether the other flours are milled in-house too, is not stated. The bakery is not in the SKAL or Demeter registers; what qualifies it here is the sourdough and the locally grown, home-milled grain. The branch also sells pastries, cakes and filled rolls, which we did not check.
The shop on Waldenlaan is open Monday to Friday from 7:30 to 18:00 and on Saturday from 7:30 to 17:00, and is closed on Sunday. Orders placed through their webshop by 17:00 on Sunday are ready on Monday.
