Farm Fields is a veal and beef farm with its own butchery at Matendijk 1 in Wekerom, on the Veluwe, which since 2006 has raised calves for rosé veal on grass and roughage and sells the meat to restaurants and households.
The calves are collected from Dutch dairy farms, many of them bull calves the dairies can't keep, and live to about eleven months. In summer they graze the farm's own meadows and land of Natuurmonumenten, Geldersch Landschap and the Hoge Veluwe; in winter they are loose-housed on deep straw. Their feed is roughage from organic ingredients, partly grown on the farm without synthetic fertiliser or chemical pesticides, and the manure goes back onto those fields. The farm also raises beef cattle that are mostly out at pasture, and sells organic lamb from several other Dutch farms. The farm and its butchery are certified organic (SKAL); we found them in the register. The meat is aged, cut and packed on the farm, where sausages and burgers are also made.
You order through the webshop at least 48 hours ahead, with a minimum order, and collect at the farm on Tuesdays from 10:00 to 15:00 or Saturdays from 10:00 to 12:00, or have it delivered by their own vans across the Netherlands on set days per postcode area.
The veal is rosé rather than white because the calves eat mainly grass and roughage, not milk powder alone.
