Le Fournil de Sébastien Amsterdam
Le Fournil de Sébastien is a French bakery on the Olympiaplein in Amsterdam, one of three shops, with Amstelveen and Hilversum, where everything is made from scratch.
The bread rises on a liquid sourdough starter made in the bakery, and their website says the long rise breaks down much of the gluten and phytates in the dough, which makes the bread easier to digest. No bread improvers are added, and the flour bought in is free of flour improvers too. Loaves are baked on the stone floor of the oven. Besides a wide range of sourdough breads there is the Baguette Tradition, butter croissants, madeleines, tarts and sandwiches.
The Amsterdam shop is open Monday to Saturday from 7:00 to 19:00 and closed on Sunday.
For the einkorn and emmer breads and the Integral, a wholemeal wheat loaf, the flour is milled in the bakery on small millstones.
