Vis van Henry (Minervaplein)
Vis van Henry is an Amsterdam fishmonger with a Friday stall at the Minervaplein farmers' market, and what we credit there are its farmed oysters from Zeeland, both the Pacific creuse and the native flat oyster.
Fines de Claire, Umami and Irish oysters also appear on the order list. The rest of the range, North Sea fish brought in fresh from the auction four times a week, smoked fish and other seafood, we haven't checked species by species. Their website says they sell no endangered species such as eel or certain tunas, no fish treated with antibiotics and nothing from large anonymous fish farms, and that they buy from skippers fishing with day boats or rod and line, or fish carrying the MSC or ASC label.
The Minervaplein stall is there on Fridays from 8:30 to 17:00. The same stall stands at the Haarlemmerplein farmers' market on Wednesdays from 8:30 to 17:00 and at the Zuidermrkt on the Jacob Obrechtstraat on Saturdays from 9:30 to 17:00, and the production site at Limmerick 52 in Westpoort is open Tuesday to Friday from 7:00 to 15:00. Orders, including the Christmas and New Year lists, go by email for collection at the Minervaplein.
The fish is smoked at small smokehouses whose smokers they know by name.
