Sourdough (desem)
In their words
“We allow the dough to ferment for 48 hours, which gives it its distinctive sour flavor and chewy texture.”

Rise Bakery is a sourdough and pastry bakery on Albert Cuypstraat in Amsterdam that raises its bread on a wild-yeast starter and bakes French-style pastries alongside it.

The bread starts from a culture of flour and water that carries wild yeast and bacteria, to which only more flour, water and salt are added, and their website says the dough then ferments for 48 hours before baking, which is where the sour flavour and the chewy crumb come from. Which flour they use, and from which mill, is not stated. Alongside the bread they make croissants, pain au chocolat, sweet and savoury brioches and tarts, in a French style with Spanish and Italian touches.

Everything is sold from the shop at Albert Cuypstraat 208H, open on Monday, Tuesday, Friday and Saturday from 8:00 to 15:00 and on Sunday from 9:30 to 15:00, and closed on Wednesday and Thursday.
