Slagerij Terpstra
- Cattle, sheep or goats graze on pasture in the grazing season
Slagerij Terpstra is a butcher on the Dorpsstraat in Wilnis that makes its own sausages, cured meats and weekly meals from meat it buys from named sources.
The beef is Blonde d'Aquitaine, sold as Ouderkerksblond, from the Boschlust farm on the Amstel. Their website says the calves grow up alongside their mothers and spend much of the year outside on herb-rich grassland, wintering in straw-bedded barns, and that the cattle are raised without antibiotics. The pork comes from Duroc d'Olives pigs, fed on wheat, barley and maize with olive oil; how those pigs are housed, and whether they go outdoors, is not stated. Lamb and veal are also on the counter, but their source is not given. From this meat the shop makes smoked ox sausage (ossenworst), pastrami, smoked ribeye, dry sausage and grilling sausages, seasoned with fresh herbs and spices and made without preservatives.
The shop is closed on Mondays and open Tuesday to Friday from 8:00 to 18:30 and on Saturday from 8:00 to 15:00. Platters for gourmet evenings and barbecues are made to order.
At Boschlust the cows calve naturally and are bred without artificial insemination, in a herd their website calls small-scale.
