Slagerij Wout van de Veen
- Cattle, sheep or goats graze on pasture in the grazing season
Slagerij Wout van de Veen is a master butcher in Ederveen, with a second shop in Renswoude, that slaughters its own animals and makes its own sausages and cold meats.
The beef comes from improved Red Pied (verbeterd Roodbont) cows bought from regular fatteners in and around Ederveen. The cows graze in the meadows there, raise two calves each and are then finished for meat. Since 2020 the butcher has slaughtered cattle, calves and pigs every Monday in its own small slaughterhouse on the Poelweg in Ederveen, and the carcasses are boned in-house. At least 95 per cent of the sausages and cold meats come from the shop's own sausage kitchen, with spice mixes made in-house and as few E-numbers as possible; these include smoked sausage, Maastricht-style pâté and Twente-style dry sausage. Pork from a regular breeder in Ederveen, chicken from a poultry supplier, and game from local hunters in season are also sold, not yet confirmed.
The Ederveen shop is open Monday, Tuesday, Thursday and Friday from 8:00 to 18:00 with a lunch break, on Wednesday morning, and on Saturday from 7:30 to 16:00. Orders can also be placed through the webshop for delivery.
The slaughterhouse also takes private animals (huisslachting), so a smallholder can have their own animal slaughtered and butchered there.
