Sourdough (desem)
In their words · translated
“De eerste artisanale zuurdesem bakkerij in Leidsche Rijn en Vleuten-De Meern.”
The first artisanal sourdough bakery in Leidsche Rijn and Vleuten-De Meern.

Bakkerij Amadeus is a sourdough bakery in the Metaal Kathedraal, an old building on the Rijksstraatweg in Utrecht, and describes itself as the first bakery of its kind in Leidsche Rijn and Vleuten-De Meern.

The signature loaf is a French country bread (landbrood) in the Normandy tradition, made from French T65 wheat flour (Label Rouge), a rye sourdough, water and Celtic sea salt, and left to rise for 18 to 24 hours. The baguette tradition gets the same long rise and is made with sourdough plus a small amount of yeast. The daily range also includes a wholemeal loaf, a multigrain loaf, rolls and butter croissants, and each day adds at least one special such as spelt, spelt-rye, fig or olive bread, with several specials on Saturdays.

Their website says the bakery is open Tuesday to Saturday, and the full range, including which special is baked on which day, is listed in the webshop on their website. They also run bread-making afternoons of at least five hours in the bakery, covering the country bread, the baguette and focaccia.

The range is kept small on purpose, and they say they adjust it to what their customers ask for.
