Bakkerij Wolf
Bakkerij Wolf is a sourdough bakery and café on the Rozengracht in Amsterdam, one of four shops the bakery runs in the city alongside Wolvenstraat, Utrechtsestraat and Zuidas.
The bread is sourdough, made with a long natural fermentation from flour, water and salt; their website says nothing else goes in, and the bakery confirms that no baker's yeast is added to the loaves. The flour comes from Wildfarmed, which according to the bakery is grown regeneratively, without pesticides or synthetic fertiliser. The same kitchen laminates viennoiserie by hand and makes a slow-proved pizza dough meant to be eaten on the day it is baked.
The Rozengracht shop is open every day from 8:00 to 16:00 and sells the sourdough loaves alongside patisserie, coffee and other drinks, and a small range of deli products. There is no delivery, so you buy at the counter.
Leftover dough and pastries from the day before are reworked into new recipes instead of being thrown away.
