de Bakkerszonen
De Bakkerszonen is a bakery on the Beukenplein in Amsterdam Oost, one of three branches in the city, which bakes all of its bread on its own einkorn mother sourdough.
Their website says every loaf is made with the bakery's mother sourdough (moederdesem), which was started on 5 November 2016 from einkorn (eenkoorn), and that the einkorn is grown around Amsterdam and milled in the bakery's own mill. It does not say whether baker's yeast is added to any loaf alongside the sourdough, or whether the other flours are milled in-house as well. The shop also sells cakes, pastries and filled rolls, which we did not check.
According to their contact page, the shop at Beukenplein 8 is open Wednesday to Friday from 8:30 to 17:00 and on Saturday from 8:30 to 16:00, and is closed on Monday and Tuesday. Orders placed through their webshop by 17:00 on Sunday are ready on Monday.
The bakery sets the flavour and structure of each bread by the amount of mother sourdough in the dough: the more of it, the firmer and fuller the loaf.
