Hartog's Volkoren Bakkerij en Maalderij
Hartog's Volkoren is a wholemeal bakery on the Wibautstraat in Amsterdam that grinds its own Dutch wheat into flour every day, in its own mill at Wibautstraat 39, up the street from the shop.
The wheat is stored in the bakery's own silo and ground in a single pass between two millstones, so nothing is sifted out and the bran and wheat germ stay in the flour. The stones are artificial, made of concrete and quartz. The flagship loaf is a compact wholemeal bread made from that flour with water, yeast and salt; it is a yeast bread, not sourdough. Their website says no bread improvers or preservatives are used, and that the bread keeps longer because the dough holds more water than usual. The shop also sells raisin, grain, sunflower-seed and muesli loaves and pastries, which we did not check against the same flour.
The shop at Wibautstraat 77 is open Monday to Friday from 7:00 to 18:00 and on Saturday from 7:00 to 17:00, and is closed on Sunday. Bread can also be ordered online and collected at a quick-pickup counter.
Through the street-side windows you can watch the wheat being milled and the bread being weighed out and baked; the bakers grind finer or coarser and adjust the water to the weather instead of using additives.
