Bakhuys Amsterdam
- Organic methods: no synthetic pesticides or fertiliser, not certified
Bakhuys Amsterdam is a bakery and café at Sarphatistraat 61, by the Weesperplein in Amsterdam, where the bread is baked in a wood-fired oven with a stone floor.
The bread is sourdough, raised on the bakery's own culture and made by hand from flour, water and salt with nothing else added. The dough rises for at least 24 hours and often 48 before it goes onto the stone floor of the oven, and the same sourdough is the base of the pizzas baked there from 12:00 each day. Their website calls the bread organic but names no mill or flour. Bakhuys holds no organic certificate; what qualifies it here is the long fermentation on its own culture. The shop also sells croissants, viennoiserie and French pastries, which we haven't judged.
The shop and café are open Monday to Friday from 7:00 to 17:00 and on Saturday and Sunday from 8:00 to 17:00. Orders can be placed by phone or email, and their website asks for notice because many of the products take at least 48 hours to make.
