Fort Negen
Fort Negen is a sourdough bakery with a sandwich bar on the Jan Evertsenstraat in Amsterdam-West, baking bread, croissants and patisserie throughout the day.
The sourdough (desem) loaves are made from local stone-ground grain and take 26 hours from start to bake, shaped by hand, for the shop and for several restaurants in the city. Their website says the bakery works directly with its farmers on an open supply chain, though neither the farms nor the mill are named. The croissants are laminated with plenty of butter and rolled one by one by hand, and the patisserie menu changes with the seasons, with new specials every weekend.
The bakery at Jan Evertsenstraat 31H is open Monday to Saturday from 8:00 to 18:00 and Sunday from 8:00 to 16:00. The sandwich bar a few doors along at number 37H serves sandwiches on their own sourdough from 8:00 until 15:00 on weekdays and 16:00 at weekends. Their webshop sells their recipe book, in Dutch and English, rather than bread.
The bakers start from a recipe and then adjust the fermentation by feel, because temperature, humidity and the grain itself change with the season.
