levain et le vin
Levain et le vin is a sourdough bakery and natural-wine shop on the Jan Pieter Heijestraat in Amsterdam-West, where bread and pastries are baked fresh every day.
No baker's yeast is used: the bread is raised only on the bakery's own sourdough starter, mixed with flour, water and a little salt, and proved for 24 hours. The range includes a classic sourdough loaf in two sizes, a 50% wholewheat loaf and a seeded rye, alongside pastries such as canelés and madeleines. Their website names no mill or flour. The shop also sells eggs, butter, sausages and vinegar from suppliers it doesn't name, so those we haven't judged.
The shop is open Monday to Thursday from 8:30 to 17:00, Friday from 8:30 to 18:00 and Saturday from 10:00 to 17:00, and is closed on Sunday. Bread and pastries can also be ordered through the webshop, with minimum quantities on some items, and larger or custom orders need at least three days' notice by email.
Unsold food is offered through Too Good To Go, and old bread goes to the pigs of Buitengewone Varkens.
