The wild boar season

Wild boar are managed from 1 July to the end of February, and all year on the Veluwe and the Meinweg.

How to choose wild boar

Darker and leaner than pork, with a stronger taste in older animals.

Nutrients in wild boar

Protein, thiamine, vitamin B12, zinc and iron; leaner than farmed pork, with more iron.

To get the most: Cook through, as with pork, but moist and slow for older animals. The fat, where there is any, is worth keeping.

Content per NEVO, the Dutch food composition database. This describes what the food contains, not what it does for you.

How to cook wild boar

Slow-roast or braise; it needs longer than pork. A young animal's loin can be roasted pink.

Wild boar, nose to tail

Shoulder, belly and cheeks for slow cooking, loin for roasting, bones for stock. Trimmings make a good sausage.
