Zuivelboerderij Hof zum Walde 'Van nature smaakvol!'
- Cattle, sheep or goats graze on pasture in the grazing season
Zuivelboerderij Hof zum Walde is a dairy farm in Spijk, between the Rhine and the Eltenberg, where the milk of 140 cows is made into yoghurt, kefir, quark and other dairy on the farm and sold in its own shop.
The cows choose for themselves between the barn and the pasture, which lies on former Rhine floodplain sown with herb-rich grass, and the farm is working towards having all its grassland herb-rich. Their website says the herbs root deeper, so the grass holds more minerals, copes better with drought and needs little or no synthetic fertiliser. The whole dairy range is made from their own milk: whole milk, buttermilk, chocolate milk, butter, plain and fruit yoghurt, kefir, quark, hangop (strained yoghurt) and custard (vla). Whether the milk is sold raw or pasteurised, we couldn't confirm. The shop also sells meat from Landgoed de Houberg, flour from the mill in Zeddam and honey from Elten, and pork, rosé veal and eggs from other farms, not yet confirmed.
The farm shop is open Thursday and Friday from 11:00 to 17:00 and Saturday from 10:00 to 16:00.
The farmer who makes the dairy notices the grazing in the butter, which turns softer when the cows have been moved onto a fresh piece of grassland.
