In the Netherlands, heather honey is in season September, at its best in September. After the harvest, Dutch stores carry it until August. In November, Dutch heather honey comes from store or from under glass, not from the field.
Heather honey is harvested at the end of September, after the bees have been taken to the heath on the Veluwe or in Drenthe for the August bloom. It is dark, strong and jelly-like.
Thick and jellied, with a bitter edge and small air bubbles caught in it.
Sugars, with more protein (from pollen), minerals and polyphenols than most honeys, and a jelly texture from its proteins.
To get the most: Eat it raw; heat thins it and loses the enzymes. The pollen and protein are what set it apart from supermarket honey.
Content per NEVO, the Dutch food composition database. This describes what the food contains, not what it does for you.
Eat it with strong cheese, or spoon it over porridge. Do not expect it to pour.
