Cultivated mushrooms through the year

Button, chestnut and oyster mushrooms and shiitake are grown indoors all year, so they have no season. The Netherlands is one of Europe's biggest growers.

How to choose cultivated mushrooms

Dry, firm caps. Buy loose rather than wrapped.

Nutrients in cultivated mushrooms

B vitamins (riboflavin, niacin, pantothenic acid), selenium, potassium and the fibre beta-glucan. Vitamin D only if they have seen UV light.

To get the most: Mushrooms left gill-side up in sunlight for an hour make vitamin D, the same way skin does. Cook them; raw mushrooms are hard to digest and some compounds in raw champignons are better destroyed by heat.

Content per NEVO, the Dutch food composition database. This describes what the food contains, not what it does for you.

How to prepare cultivated mushrooms

Fry in a hot, dry pan without crowding until browned, then add fat and salt.

Cultivated mushrooms, root to stem

Stalks are as good as caps; trim only the very base. Dried-out mushrooms grind into a seasoning powder.

Who sells cultivated mushrooms
