The broccoli season

Dutch broccoli comes from the field from June to November. Winter broccoli is imported from Spain.

How to choose broccoli

Tight, dark heads with no yellow flowers opening.

Nutrients in broccoli

Vitamin C, vitamin K, folate and the glucosinolates that become sulforaphane when cut or chewed.

To get the most: Steam for three to four minutes rather than boiling; chopping it and leaving it ten minutes before cooking lets more sulforaphane form. Eat the stalk, it has the same nutrients.

Content per NEVO, the Dutch food composition database. This describes what the food contains, not what it does for you.

How to prepare broccoli

Steam for four minutes. Peel and slice the stalk; it is as good as the florets.

Broccoli, root to stem

The stalk is as good as the florets: peel the outside and slice it. The leaves roast like kale.

Who sells broccoli

9 producers in The Field Guide sell broccoli, according to their own website or shop list, each checked against our inclusion criteria and listed by province. Another 170 growers passed our bar for this food group; we have not yet recorded what each of them grows, so ask them or search the map.
