The season for runner beans

Runner beans, snijbonen, are cut into thin strips, which is where the Dutch name comes from. They are picked from July to September.

How to choose runner beans

Look for flat, firm pods without large seeds showing.

Nutrients in runner beans

Fibre, vitamin K, folate and vitamin C, like other green beans.

To get the most: Cook them; raw runner beans contain lectins that upset the stomach. Slice thin so they cook fast.

Content per NEVO, the Dutch food composition database. This describes what the food contains, not what it does for you.

How to prepare runner beans

Slice on the diagonal, or through a bean slicer, and boil for ten minutes. They also salt-ferment well in a crock, a Dutch tradition for the winter.

Who sells runner beans

9 producers in The Field Guide sell runner beans, according to their own website or shop list, each checked against our inclusion criteria and listed by province. Another 169 growers passed our bar for this food group; we have not yet recorded what each of them grows, so ask them or search the map.
