In the Netherlands, white asparagus is in season April to June, at its best in May. November is outside the Dutch season for white asparagus.
The Dutch season opens on the second Thursday of April and closes on 24 June, Sint-Jan, so the plants can grow out and recover. The start shifts a week or two with soil temperature; the end does not.
Dutch white asparagus is sold with the cut end still moist and the tips closed; a thicker, straight spear is a grade, not a sign of freshness. Outside April to June, white asparagus is imported or frozen.
Folate, vitamin K and potassium, with a little vitamin C. Mostly water, so light on everything else. About 93 percent water with potassium, so a hydrating vegetable.
To get the most: Steam or simmer briefly rather than boiling long; folate and vitamin C leach into the water, so use the cooking water for the soup.

Peel from just under the tip downwards and snap off the woody end. Simmer gently for eight to twelve minutes, or roast green spears whole. Keep the peelings and ends for a stock.
6 producers in The Field Guide sell white asparagus, according to their own website or shop list, each checked against our inclusion criteria and listed by province. Another 173 growers passed our bar for this food group; we have not yet recorded what each of them grows, so ask them or search the map.
