In the Netherlands, sweetcorn is in season August to September, at its best in August and September. November is outside the Dutch season for sweetcorn.
Dutch sweetcorn is picked in August and September. Its sugars turn to starch within days, so fresh local cobs taste very different from stored ones.
Husks green and tight, silks moist, kernels plump to the tip.
Fibre, B vitamins (thiamine, folate) and the carotenoids lutein and zeaxanthin. Starchy, more like a grain than a vegetable.
To get the most: The lutein and zeaxanthin are fat-soluble, so butter on the cob is not only tradition. Niacin in corn is bound unless the corn is nixtamalised.
On our nutrient density chart, a normal serving of sweet corn (150 g) gives about a fifth of a day's vitamin B3 and about a tenth of a day's vitamin B6, counting what your body absorbs.

Boil for four minutes or grill in the husk. Cut the kernels off raw for a salad.
Simmer the stripped cobs for a sweet corn stock. Husks can wrap fish or meat on the grill.
