Free-range eggs through the year

Hens lay all year, but without artificial light they lay less in the short days from November to January, so small farms with outdoor flocks can run short in winter. Spring is the laying peak.

How to choose free-range eggs

Code 0 (organic) or 1 (free range) printed on the egg. Pasture-raised yolks turn deep orange in summer.

Nutrients in free-range eggs

Protein, choline (mostly in the yolk), vitamin B12, vitamin D, vitamin A, selenium, iodine and lutein; pasture-raised eggs carry more vitamin D, omega-3 and carotenoids in the yolk.

To get the most: Cook the white, keep the yolk soft: a cooked white is digested better and avoids avidin binding biotin, while a runny yolk keeps more of its lutein and heat-sensitive fats. The deep orange of a summer pasture yolk is carotenoids.

How to prepare free-range eggs

Keep eggs pointed end down. A very fresh egg poaches best; a week-old one peels best when boiled.
