In the Netherlands, potatoes are in season June to October, at their best in June and July. After the harvest, Dutch stores carry them until May. In November, Dutch potatoes come from store or from under glass, not from the field.
The first Dutch new potatoes are dug in June, the main crop is lifted in September and October, and the stores carry it until the next early crop. The Netherlands grows more potatoes than anything else, so a Dutch potato is available every day of the year; the new ones in early summer are the seasonal event.
New potatoes have thin skins that rub off with a thumb and should be eaten within days. Main-crop potatoes have set skins; by spring they sprout, which is harmless, rub the sprouts off. Floury (kruimig) or waxy (vastkokend) is on the bag.
Vitamin C, potassium, vitamin B6 and fibre, more in and under the skin. Cooled potatoes form resistant starch.
To get the most: Boil or steam in the skin and eat the skin. Cooking, then cooling and reheating, turns some starch into resistant starch, which behaves like fibre.
On our nutrient density chart, a normal serving of boiled potato (200 g) gives about half a day's vitamin B6 and about a third of a day's vitamin C, counting what your body absorbs.

Boil new potatoes in their skins with mint and finish with butter. Store main-crop potatoes somewhere cool and dark, never the fridge. Floury kinds for mash and chips, waxy for salads and gratins.
Eat the skins. Peelings from main-crop potatoes roast into crisps with oil and salt.
50 producers in The Field Guide sell potatoes, according to their own website or shop list, each checked against our inclusion criteria and listed by province. Another 139 growers passed our bar for this food group; we have not yet recorded what each of them grows, so ask them or search the map.
